If they're served with crushed rock sugar, usually while you're waiting for the bill after the meal, they're cumin seeds.

I think the main difference between the mainstream Thai food and the southern variety is that they use more spices down south. Although the basic ingredients are the same, you will find ginger, cumin, tumeric, mustard seeds, fennel, cloves and leaves from the curry tree will have been added.

As for the heat in the chilies, it varies according to the weather. They tend to get spicier in a hot, dry spell.

REMEDIES:

4) A new one: Just heard it a few weeks ago and have not tried it. Told to me by an old Thai woman, almost 80 so I respect her knowledge. She said eat a teaspoon of namthan see kow(sp) (white sugar) and the burn will stop immediately.

If anyone has a chance to try #4, please let us know the results. Pete

It WORKS Pete!!!!

But I had to eat 2 teaspoons before it was of any help.
After that the usual fire extinguisher.
A bottle of Leo?

You guys could be in for a lot of fun. Over here, you buy a bucket of KFC chicken for the gals in the bar and you are immediately annointed as someone special and....they don't ever forget. Although, they do often mention that you should by them more. thumbs up Pete
